- Stir gently, and warm slowly up to 100°F (38°C). This helps firm up the curd.
Step 6 Drain the Whey and Press the Cheese:
- Pour off excess whey, but leave the curds intact. Put the curds into a cheese mold, press lightly for 3 or 4 hours.
Step 7 Salt, Age and Enjoy :
