  • Salt (for flavor and preservation)
  • Calcium Chloride (optional, helps improve curd formation)

Instructions:

  • In a large pot, heat fresh cow’s milk to about 90 °F (32 °C).
  • Add mesophilic starter culture, cover the pot and let the mixture rest for about 45 minutes, allowing flavor to develop.
  • Dilute rennet in water & stir it into the milk. If shaping into wheels (see instructions below), let rest for 30-40 minutes until curds form.
  • When the milk is set, use a knife to cut the curds into small blocks to help the whey drain.
  • Stir gently, and warm slowly up to 100°F (38°C). This helps firm up the curd.
  • Pour off excess whey, but leave the curds intact. Put the curds into a cheese mold, press lightly for 3 or 4 hours.
  • Unmold, salt, and age the cheese for at least 4 weeks. Once properly aged, Monterey Jack is ready to be sliced, melted, or shredded for various dishes.
